Weekend Cooking: Molten Brownie Bites from 400 Calorie Fix

I bought the 400 Calorie Fix: Slim is Simple; 400 Ways to Eat 400 Calorie Meals last year at the same time I purchased a subscription for Prevention Magazine (my progressing age is coming out).  Since then I've tried many of the recipes and followed the 400 calorie/meal eh, most of the time.  The illustrations are great; the meals are planned out with a main course, bread product and oftentimes a dessert.  There is a section about eating out and what to get from many of the popular chain restaurants.  One thing that surprised me are the quite delectable desserts such as the Molten Brownie Bites below.  If you are a chocoholic or even part-time need that chocolate fix - these brownies are perfect for the healthy conscious eater.  By the way, I am not a dieter. I love food too  much to ever really diet, but this book makes eating fun, easy and healthy.

Molten Brownie Bites

Ingredients:
1 box (20 oz) Ghirardelli Double or Triple Chocolate Brownie Mix
2 eggs
1 egg yolk
1/4 cup low-fat mayonnaise
1/2 cup unsalted butter, melted

Directions:
1. Preheat over 400 degree F. Coat a 24-cup mini muffin pan well with cooking spray, covering the insides of the cups and the top of the pan.
2. Place brownie mix in large bowl. Beat together the eggs, egg yolk, and mayo in a small bowl with an electric mixer on high speed for 2 minutes. Add to the brownie mix along with the butter.
3. Place the batter in the muffin pan, filling each cup to the top. Bake for 10 minutes, or until the top surface is just cooked and the inside is still soft.
4. Immediately and gently remove the brownie bites from the pan using a tablespoon and serve.

Extras:
These brownie bites are 300 calories per serving.  One serving = 2 brownie bites.  And these brownie bites are rich so two will probably meet that chocolate craving! A glass of low-fat or fat-free milk will bring this yummy dessert to 400 calories.

  1. Those brownie bites look decadent!!! I can't wait to try them...I struggle with trying to find recipes for desserts that are portion size acceptable as well as rich enough to satisfy that sweet craving after dinner...these look like they could do just that! THANKS!

  5. Anything that has anything related to Ghiradelli chocolate is guaranteed to be numalicious. Those look really great.

    I'm completely taken with the Ghiradelli hot chocolate mixes - great in their own right, outstanding if you had a little Bailey's Irish creme.
