Weekend Cooking: Crab Bisque - Absolutely Divine!

I wholeheartedly admit I am a southern gal through and through. I grew up learning how to make buttermilk biscuits from scratch (easy peasy!), preparing fried chicken that has just the right crunchiness and juiciness and baking cakes and pies with so much sugar your teeth could fall out.  So of course I have also been a huge fan of Paula Deen's recipes & her Lady & Sons Restaurant in Savannah, Georgia.

When Paula Deen recently announced she has been struggling with adult-onset diabetes, my heart went out to her. I can't imagine having to give up all of the delicious desserts and heavenly southern dishes she makes. I have been saddened by the uproar about her diagnosis and show on southern cooking. Her health is her business - not mine. And honestly I feel really bad for her. Giving up a lifetime of food choices has got to be so darn hard that it's not even funny. And if she waited to share her diagnosis with the world - well, that's her choice. Heck, I don't know if I would ever share all of my personal business if I were in her shoes.


So, because I still love Paula Deen and forever will, I would like to share one of my absolute favorite recipes from her Lady and Sons Too! cookbook.  And as a side note, my middle child was the first to ever gift me a Paula Deen cookbook, and that first one has been used more than any other cookbook on my shelves.  I love you sweet baby girl!





Crab Bisque (otherwise known as the most delicious soup you will ever have!)



Ingredients
1   10 3/4-ounce can cream of asparagus soup
1   10 3/4-ounce can cream of mushroom soup
1/4 cup milk
1/4 cup half-and-half
1/2 lb crabmeat, picked free of shells
1/4 cup dry sherry

Directions
Using a heavy saucepan, combine all of the ingredients and bring to a boil.  Reduce the heat and allow to simmer for 5 minutes.

Serve with oyster crackers or saltines.

Enjoy!

    On one hand I understand the uproar. On the other I'm with you, I really feel for her.

    I think we should all cut her some slack.

  3. I love Paula Deen and hate all the heat she's been getting lately. I think most of us are informed enough to know we shouldn't fry our food or prepare a big rich dessert every evening. But, once in while, yummy!

    1. Annie ~ very good point - as informed as we all are about butter, shortening, sugar , etc. eating in moderation is the key to any of the southern yummy dishes

  5. Well this couldn't be easier. I'm not a huge fan of Paul Deen's because most of her recipes are too fatty or too sweet for us -- maybe our Yankee backgrounds coming through?

  6. I can't jump on the anti Paula bandwagon. She always seem nice. I have never made any of her stuff but really folks, you did not know a stick of butter was bad for you? sure, not an everyday thing but occasionally..

  7. I love crab bisque, and am so glad to have this recipe, because I would love to make it sometime! As a person who suffers from adult onset diabetes, I think that Paula has a lot of work to do when it comes to managing her health, and shouldn't be castigated when it comes to sharing her diagnosis. It's a hard disease to handle, but it can be done, and I pray for her and hope that she gets herself into a place where she can manage it. Thanks for the recipe, Stacy and for sharing your sentiments on Paula Deen.

    1. Oh Heather I am so sorry about having diabetes - for such a disease that is so prevalent in society you would think a cure would be found by now. I have hypoglycemia and a drop in my blood sugar resulted in an almost fatal car accident so I KNOW blood sugar problems can be devastating. Let me know if you try this recipe and what you think - I love it! The simplicity and the taste.....ahhh, perfection!

  8. I love Paula Deen also and it really makes me mad about all the bad press she is getting. I wish the 'watchdogs' would get out of our kitchens and our lives. I have cooked many of her recipes and we are not fat or diabetic. But i can't do seafood, especially crustaceans:( My hubby eats the lobster and eat chicken!
